White broad beans and chicories

INGREDIENTS FOR 4 PERSONS
400 g white dried broad beans
600 g rural chicories
1 potato (optional)
100 g small black olives (optional)
2 cloves of garlic
chili (optional)
4 spoons of extravirgin olive oil
salt
pepper


PROCEDURE:
Soak the board beans the evening before cooking them. Clean them and put them into a pot together with a potato cut into pieces, cover with water and cook them. Skim the broad beans and simmer them for a couple of hours, smashing them frequently. Put salt in them and mash the board beans. Boil the wild chicories, prepare garlic and chili lightly fried in oil and add the olives. Cook for some minutes adding chicories and salt. Serve the warm broad beans together with the chicories. Cooking time 12 hours + 3 hours + 45 minutes for the making
