Braciole of horse meat

INGREDIENTS FOR 4 PERSONS
500 g slices of horse meat
200 g tomato sauce
extravirgin olive oil
50 g fresh Pecorino
garlic, onion, chili, dry white wine, parsley, basil, salt


PROCEDURE:
Spread the slices of meat and thin them with the meat pounder. Spread slivers of cheese, minced garlic and parsley, salt and a pinch of pepper on each slice of meat. Wrap the slices, make sure the stuffing does not come out of them, and fix them with a white thread or with some toothpicks. Brown the roulades of meat in a clay pan together with chopped onions, oil and a drop of dry white wine. Add the tomato sauce, a pinch of chili, the chopped basil and cook for about 2 hours, adding also some salt water in order to avoid the sauce from being too thick
