INGREDIENTS FOR 4 PERSONS
1 Kg lamb
1 onion
Parsley
Pecorino cheese
Tomatoes
Salt
Pepper
Extravirgin olive oil
Cicorielle (chicories)
Wild fennel


PROCEDURE:
Clean the lamb and put it into a pan. Add onion, parsley, tomatoes, Pecorino cut into pieces, salt, pepper, olive oil and cover with water. Put the lid on the pan and cook on a very slow heat. After cooking the lamb for about half an hour, you can add cicorielle, wild fennel and Pecorino cheese, and go on with the cooking for about 1 hour
