Bread rissoles in pulped tomatoes

INGREDIENTS FOR 4 PERSONS
4 eggs
100 g grated Pecorino cheese
150 g grated stale breadcrumbs
2 spoons of minced parsley
300 ml Italian pulped tomatoes
1 clove of garlic
fresh basil
extravirgin olive oil
salt, pepper


PROCEDURE:
Break the eggs and whip them in a bowl, add the cheese, the breadcrumbs, and the parsley. Mix all the ingredients, put salt and pepper. Should the consistency be too liquid, add bread and pecorino cheese. Make some balls and fry them in plenty of hot oil. They should be crunchy and golden. Heat some spoons of oil and the clove of garlic in a stewpan, mix them with the pulped tomatoes, cook for 10 minutes, add 400 ml water, so that the sauce could be liquid enough. Put salt and pepper, boil and add the rissoles. Cook on a slow heat for 20 minutes. Finally add minced basil and serve
