Stuffed sardines

INGREDIENTS FOR 4 PERSONS
8 sardines
2 eggs
100 g grated Pecorino cheese
80 g breadcrumbs
250 g small tomatoes
1 clove of garlic
parsley
Extravirgin olive oil
Salt


PROCEDURE:
Warm up the oven at 180°. Clean the pilchards, remove the fishbone and the head, rinse and wipe them. Make the stuffing by putting the eggs, the breadcrumbs, the grated cheese and a handful of minced parsley into a bowl. Mix and add a spoon of extravirgin olive oil. Stuff the pilchards with the mixture. Cut the small tomatoes in half and dress them with salt and 3 or 4 spoons of oil. Lay some tomatoes on the pan, line up the stuffed pilchards and cover with the remaining tomatoes. Bake for about 20 minutes
